These simple skewers are an ideal appetizer for an Indian-inspired meal and pack a protein punch with a Greek yogurt-based raita for dipping. Utilizing curry powder saves time, and you’ll decide a gentle or sizzling mix to fit your style.

Curried Rooster Skewers With Raita

Substances

For the rooster skewers

  • 8 (6-8 inch) picket skewers
  • 12 oz (340g) boneless, skinless rooster breast
  • 1 tsp curry powder
  • 2 tsp contemporary lemon juice
  • 3 tsp avocado oil, divided
  • 16 cherry tomatoes

For the raita

  • 3/4 cup (184g) plain nonfat Greek yogurt
  • 1 cup (120g) cucumber, chopped 
  • 2 tbsp contemporary mint, minced
  • 1/4 tsp salt
  • 1/4 tsp freshly floor black pepper

Instructions

Soak skewers in water for a minimum of half-hour.

Slice the rooster breast into 8 lengthy strips, then place in a medium bowl. Add the curry powder, lemon juice and 1 tsp avocado oil and toss to coat. Enable rooster to marinate for a minimum of 5 minutes.
