Just a little spicy, just a little candy, this vegan sheet pan dish stars cauliflower steaks dressed up in a kung pao-like sauce. Cilantro and inexperienced onions add a recent punch and peanuts add crunch and a few protein. Serve with brown rice or over whole-wheat noodles.

Sheet Pan Kung Pao Cauliflower Steaks

Components

  • Cooking spray 
  • 1 medium head cauliflower, reduce into 4 steaks, about 1/2-inch
  • 1 medium purple bell pepper, reduce into 1/2-inch thick slices
  • 1 tbsp safflower oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp minced ginger root
  • 1 tbsp reduced-sodium soy sauce
  • 2 medium garlic cloves, minced
  • 1 tsp darkish sesame oil
  • 1 tsp Sriracha or different scorching chili paste
  • 1/4 cup roasted peanuts, roughly chopped
  • 2 inexperienced onions, thinly sliced
  • 1/4 cup cilantro, chopped

Instructions
