While there may be four calendar seasons, our favorite season is a fifth: Strawberry Season! Y-U-M! Nothing beats fresh strawberries in the summertime! Whether you’re growing them yourself, picking them at the u-pick, scooping them up at the local farmers market, or adding them to your Instacart order, we’ve got the best recipes for you to make in today’s post!

No Bake Strawberry Ice Box Cake

No Bake Strawberry Ice Box Cake

Equipment

  • 3 3.4 Boxes Instant Cheesecake Pudding can be replaced with vanilla
  • 4 Cups Whole Milk
  • 2 Cups Cool Whip
  • 1 Box Graham Crackers
  • 3-4 Cups Strawberries

Ingredients

  • 3 3.4 Boxes Instant Cheesecake Pudding can be replaced with vanilla
  • 4 cups Whole Milk
  • 2 cups Cool Whip
  • 1 box Graham Crackers
  • 3-4 cups Strawberries, cut

Instructions

  • In a large mixing bowl, whisk together the pudding mix and cold milk until well smooth and slightly thick.
  • Mix in the Cool Whip until combined. Keep aside.
  • In a 9×13 pan, line graham crackers on the bottom to cover the whole pan.
  • Spoon a third of the pudding/cool whip mixture on top of the crackers and spread with a spatula.
  • Add a layer of strawberries.
  • Arrange another layer of graham crackers on top of the strawberries, spread more pudding/cool whip mixture on top, followed by more strawberries.
  • Arrange a final layer of graham crackers, spread remaining pudding/cool whip mixture on top, followed by remaining strawberries.
  • Cover and chill in fridge 6-8 hours or overnight to let the filling set.
  • If you prefer frozen, cover and stick in freezer! Wait 30-40 minutes to thaw when serving!

Strawberry Almond Muffins

Ingredients

  • 2 cups All Purpose Flour
  • 3/4 cup Granulated Sugar
  • 2 tsp Baking Powder
  • 1 tsp Salt
  • 1 tbsp Cornstarch
  • 1/3 cup Vegetable Oil
  • 3 tbsp Unsweetened Applesauce
  • 1 tsp Almond Extract
  • 2 cups Freshly Chopped Strawberries
  • 1/3 cup Chopped Shaved Almonds

Instructions

  • Preheat your oven to 375 degrees F and spray your muffin tin with oil.
  • In a large bowl, combine all dry ingredients and whisk.
  • Combine wet ingredients and stir until it is mixed well and evenly.
  • Fold in fresh strawberries and chopped almonds.
  • Transfer batter into muffin tin.
  • Optional: Sprinkle brown sugar and any remaining almonds on top of muffin batter.
  • Bake for 20 minutes and cool for 5 minutes.
  • Enjoy!

Ingredients

  • 1/2 cup oats
  • 1/2 cup unsweetened vanilla almond milk
  • 1 dash ground cinnamon
  • 1 TBSP chia seeds
  • 1 TBSP maple syrup
  • 1 handful diced fresh berries

Instructions

  • Place all ingredients in a jar with a lid.
  • Let is sit in the fridge overnight.
  • When you're ready to eat, stir and enjoy!

An easy recipe perfect for breakfast or a snack!

Ingredients

  • 1 banana ripe
  • 1/2 cup oats
  • 3/4 cup flour
  • 4 tbsp coconut oil
  • 3 tbsp peanut butter or nut butter choice
  • 6 tbsp almond or oat milk
  • handful strawberries
  • 1 tsp vanilla
  • 2 tbsp maple syrup optional

Instructions

  • Preheat oven to 350
  • Mix all items together and add to pan [I used 9×9]
  • Bake at 350 for 20 minutes and enjoy!

Strawberry Rosé Popsicles

Strawberry Rosé Popsicles

Ingredients

  • 2 c Rosé Wine
  • 1.5 c Frozen Strawberries
  • 1.5 c Ice Cubes
  • 2 T Simple Syrup or Honey

Instructions

  • Mix ingredients together in blender until smooth.
  • Funnel into popsicle molds.
  • Freeze for at least 6 hours. Enjoy!

Healthy Strawberry Oatmeal Bars

Ingredients

For the Crust & Crumble

  • 6 tbsp unsalted butter, melted
  • 1 cup almond flour
  • 1/2 cup  cassava flour
  • 1 1/2 cups regular oats (not the instant kind)
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1 tsp  ground cinnamon
  • pinch salt

For the Strawberry Filling

  • 2 cups  sliced fresh strawberries
  • 1 tbsp  fresh lemon juice
  • 1 tsp vanilla extract
  • 1 tsp cassava flour

Instructions

  • Preheat oven to 350°F.
  • Line the bottom of an 8×8 pan with parchment paper and spray with cooking spray for easy removal.
  • To make the crust & crumble, to a large bowl add melted butter, cassava flour, almond flour, regular oats, honey, brown sugar, ground cinnamon and salt. Mix until just combined, mixture should be a little crumbly. Scoop out 1 cup of the mixture and set aside, that will be your crumble.
  • Add the remaining mixture to the prepared pan. Spread the mixture out and using your fingers press into the bottom of the pan so the crust is in an even layer.
  • To make the Strawberry Filling: to a small bowl add strawberries, lemon juice, vanilla extract, and flour. Toss to combine.
  • Add the strawberry mixture on top of the crust and spread out evenly.
  • Evenly sprinkle the crumble mixture over the top of the bars.
  • Bake the bars for 40 minutes. Remove the bars from the pan and let sit for 10 minutes. Cut and serve.

The Best Strawberry Ice Cream

The BEST Strawberry Ice Cream

Note * Requires ice cream maker!

Ingredients

  • 8 oz fresh strawberries, trimmed, cut in quarters
  • 1/2 cup granulated sugar
  • 1 tsp light corn syrup
  • 1 tsp lemon juice
  • 1 cup heavy cream

Instructions

  • In a large bowl, add strawberries, sugar, corn syrup, and lemon juice. Using a fork, mash strawberries very well. Allow mixture to sit for 10 minutes, stirring regularly.
  • Add heavy cream and mix until well combined.
  • Pour into an empty Ninja CREAMi Pint. Place storage lid on pint and freeze on flat surface for 24 hours.
  • Remove pint from freezer and remove lid from pin. Place in Ninja CREAMi unit, and lock in place.
  • Select Ice Cream to stir.
  • Enjoy 🙂

Strawberry Frozen Yogurt – Ninja Creami Deluxe

Ingredients

  • 1 Cup Strawberries Crushed
  • 2 Cups Vanilla Greek Yogurt
  • 1 T Honey

Instructions

  • Add Strawberries to pint container. Use a potato masher to crush berries.
  • Add Vanilla Greek Yogurt and Honey to Strawberries in pint container. Fill to SCOOPABLE MAX FILL line. Mix well to combine.
  • Freeze for a minimum of 24 hours.
  • Remove lid from pint container, place into outer container and attach lid. Insert outer container into Ninja Creami Deluxe, turn to lock in processing container.
  • Select FULL for a full pint. Process using FROZEN YOGURT setting. Press center button to start. RE-SPIN if needed for a creamier texture.

Ingredients

  • 2 Kiwis, peeled and diced
  • 2 Apples, peeled and diced
  • 16 oz Strawberries, diced
  • 8 oz Raspberries
  • 2 Tbsp White Sugar
  • 1 Tbsp Brown Sugar
  • 3 Tbsp Strawberry Fruit Preserves
  • 1 Bag Cinnamon Pita Chips

Instructions

  • In a large bowl, combine strawberries, kiwis, raspberries, apples, sugars, and fruit preserves.
  • Cover and chill in the refrigerator.
  • Serve with Cinnamon Pita Chips! Enjoy!
  • Recipe Note: This is best to make and serve the same day if possible to keep the apples from browning!

  • 1/2 C Fat Free Vanilla or Plain Yogurt
  • 2 Eggs
  • 1/2 C Milk
  • 1/2 t Vanilla
  • 1/4 t Salt
  • 1 t Baking Powder
  • 3 C Quick Oats
  • 1/4 C Brown Sugar Packed
  • 3/4 t Cinnamon
  • 1/8 t Nutmeg
  • 1 C Strawberries Chopped

Instructions

  • Preheat oven to 350 degrees. Spray 9×9 pan.
  • Mix together Yogurt, Eggs, Milk and Vanilla.
  • Add Salt, Baking Powder, Oats, Brown Sugar, Cinnamon and Nutmeg. Stir to combine.
  • Stir in chopped Strawberries. Pour into prepared 9×9 pan, bake for 35 minutes
  • Optional: Serve with fat free yogurt and fresh strawberries.
  • Store leftovers in the refrigerator.

  • 1 Angel Food Cake
  • 8 Oz Cream Cheese Softened
  • 1/3 Cup Powdered Sugar

  • 1 tsp Lemon Juice
  • 16 Oz Cool Whip 2 Standard Size Containers or 1 Large
  • 16 Oz Strawberries Standard Container

Instructions

  • Cut prepared Angel Food Cake into cubes
  • Mix softened Cream Cheese, Powdered Sugar, Vanilla Extract, Lemon Juice and 8 Oz of Cool Whip.
  • Chop Strawberries into bite size pieces.
  • Add to pan in layers: Angel Food Cake, Cream Cheese Mixture, Remaining Cool Whip, Strawberries. Chill and serve!

Strawberry Chicken Salad

Ingredients

  • 1 sliced Grilled Chicken Thigh
  • 1/2 sliced Avocado
  • 1/2 cup Strawberries
  • 1/4 cup Shredded Cheese
  • 2 tbsp Pumpkin Seeds
  • 2 cups Lettuce
  • 1 tbsp Balsamic Dressing

Instructions

  • Add lettuce to bowl
  • Top with all ingredients
  • Add dressing, salt and pepper to taste
  • Enjoy!
